Special Rice for party and occasion

Intro

Bangladesh is a land of variations of food and culture. About 180 million people live here. And we have a variation of culture and ethnic group. But for many of the cases, rice is the main food of Bengali culture. Now a days, we can see Roti is second best food item for daily meal or dishes but rice is the very first priority and common food item. We want to have something like fish, meat, chicken mutton and others with rice. So, I just want to share a simple recipe of rise today.

 

The recipe I am sharing is not normal or common rice. This is high class and special type of rice which is normally cooked when guests are coming to the houses. And the rice is basically specialized for an occasional event and we would like to cook these when there is such kind of invitation or occasion.  I know the Bengali name of this rice but I cannot translate it exactly.  It is called POLAO or CHINIGURA rice in Bengali.

 

 

Ingredients

 

Rice (CHINIGURA)

Soyabean Oil

Onion

Garlic

Ginger

Cinnamon

Cardamom

Dried grapes

Bay leaves

 

 

 

Step by step

  1. Put a pan in the burner and heat soyabean oil
  2. Onion slice, Cinnamon, Cardamom, Dried grapes, Bay leaves has to be mixed in the soyabean oil and cooked until the onion became brown colour.
  3. Finally garlic and ginger have to be mixed before mixing rice.
  4. Mixing rice to it after washing well.
  5. Cook until sound of burning
  6. Now putting water to it in the ratio of 2:1 (Two times water than rice)
  7. Cooking until the rice become soft. Sometimes it need shake so that cannot stick to the pot.
  8. Its done.

বাংলাদেশ খাদ্য ও সংস্কৃতির ভিন্নতার একটি দেশ। এখানে প্রায় ১৮ লক্ষ মিলিয়ন মানুষ বাস করে। আমাদের সংস্কৃতি এবং নৃগোষ্ঠীর অনেক বিভিন্নতা রয়েছে তবে বেশিরভাগ ক্ষেত্রেই ভাত বাঙালি সংস্কৃতির প্রধান খাদ্য। আজকাল আমরা দেখতে পাচ্ছি যে রুট প্রতিদিনের খাবারের জন্য দ্বিতীয় সেরা খাবার আইটেম তবে ভাতই প্রথম অগ্রাধিকার এবং সাধারণ খাবারের জিনিস। আমরা মাছ, মাংস, মুরগি, খাসি ইত্যাদি ভাত সহ পেতে চাই। সুতরাং, আমি আজ ভাত রান্নার একটি সহজ রেসিপি শেয়ার করছি।

 

আমি যে রেসিপিটি শেয়ার করছি তা সাধারণ ভাত নয়। এটি উচ্চ শ্রেণীর এবং বিশেষ ধরণের চাল থেকে যা সাধারণত রান্না করা হয় যখন অতিথিরা ঘরে আসেন। এবং চালটি মূলত কোন উপলক্ষ্যে বা ইভেন্টের জন্য বিশেষীকরণ করা হয় এবং যখন এই জাতীয় আমন্ত্রণ বা অনুষ্ঠান হয় তখন আমরা এগুলি রান্না করতে চাই। আমি এই চালের বাংলা নাম পোলাও বা চিনিগুড়া চাল।

 

 

উপকরণ

 

চাল (চিনিগুরা)

সয়াবিন তেল

পেঁয়াজ

রসুন

আদা

দারুচিনি

এলাচ

কিচমিচ

তেজপাতা

 

 

 

ধাপে ধাপে

১। বার্নারে একটি প্যান রাখুন এবং সয়াবিন তেল গরম করুন

২। পেঁয়াজের টুকরো, দারুচিনি, এলাচ, কিচমিচ ও তেজপাতাগুলি সয়াবিন তেলে মেশাতে হবে এবং পেঁয়াজ বাদামি রঙ হওয়া পর্যন্ত রান্না করতে হবে।

৩। অবশেষে রসুন এবং আদা মিশ্রিত করতে হবে।

৪। ভাল করে ধুয়ে নেওয়ার পরে চালগুলোতে এবার মিশিয়ে নিন।

৫। চাল্গুলো জ্বলন্ত শব্দ না হওয়া পর্যন্ত রান্না করুন।

৬। এখন এটিতে জল 2: 1 মিশান (ভাতের চেয়ে দ্বিগুণ জল)

৭। চাল নরম না হওয়া পর্যন্ত রান্না করা। কখনও কখনও এটি ঝাঁকুনির প্রয়োজন যাতে ভাতগুলো পাত্রের সাথে আটকে না যায়।

৮। এটি সম্পন্ন

 

 

 

এটি বাংলাদেশের অনেক সংস্কৃতিতে কোনও পার্টিতে অত্যন্ত অভিজাত শ্রেণি এবং খুব প্রচলিত একটি খাবার। আমি আশা করি আপনি এই রেসিপি ও সংস্কৃতি জেনে উপকৃত হয়েছেন। এই সাধারণ রেসিপিটি নিয়ে এই প্রতিযোগিতায় অংশ নিয়ে আমি খুব আনন্দিত। তবে ভাল লাগা এটি যে আমাদের সংস্কৃতির একটি অংশকে শেয়ার করতে পেরেছি। ধন্যবাদ।
