Good afternoon, today I want to share with you a recipe for a potato, carrot, egg and tomato salad with a different dressing than what we are used to, which is mayonnaise. Due to the economic situation in my country the Venezuelan has had to figure out how to supplant an ingredient, if not lose that special touch that he has in every meal.
Day by day in my experience as a Venezuelan mother we must invent ourselves in the kitchen to change or vary the menu with the ingredients that we have on hand, on other occasions I have commented that I love cooking, but inventing different dishes adding that special touch that it is mother's love.

3 eggs
4 tomatoes
1 sprigs of coriander.
Duration: 1 hour.

Quantity: 4 people.
- Wash the potatoes and carrot, then place it in a pot where the water that covers it completely is added, to cook over high heat for about 30 minutes. When they are ready to remove it from the water, let it cool, to peel it.
- Chop the carrot, potato and egg into small squares, but extract the yellow to use it for the dressing. Then we take the tomato, the coriander sprig previously washed. Chop and add to the mold where the potatoes and carrots are.
- With the three yellows of the boiled egg, place it on a plate and add oil, salt, vinegar, then crush it and make it homogeneous, this will be the dressing of our salad replacing the mayonnaise.
Add the dressing in the mold where the ingredients are, stir with a spoon and serve on a plate.
