Oven Baked Schnitzel with fresh breadcrumbs

This is my first post and also, English is not my first language so please be kind. 🙏🏻
First of all, food is my passion and my first love. My mother was a stay at home mom and she used to cook all day delicious meals for me and my brother so this was the first love language that I learned and nowadays it's also my way to show love and gratitude to my family and friends.

I discovered this passion when I first moved with my boyfriend (now fiance) and I had to cook for us since he was the only one working. With each meal prepared I felt in love more and more with cooking and started spending a large part of my time in the kitchen looking for new recipes to try.

Four years have passed since then, I've tried many recipes and made many mistakes, but I also learned a lot of tips and tricks that I can't wait to share with you! 🤭


 

To make the breadcrumbs you will need some old and dry bread and a food processor.

All you need to do is to put the old bread in the food processor and mix it until you get crumbs. I had two kinds of bread, one wholemeal and one with seeds.

Ingredients for the schnitzel:

-300 grams of protein (I prefer chicken breast but you can use any meat you like.)
-3 spoons of white flour
-one extra large egg 🥚 (I like to add one spoon of milk)
-breadcrumbs
-spices of your choice 🧂

Instructions:

If your source of protein don’t come in slices, you need to slice it. 🔪

After that, put the flour in a deep plate and do the same with the breadcrumb.

Beat the egg (with milk if you want) in a bowl with salt and spices.

Now I’m going to tell you a little tip. If you want the crust to stick with the meat, always dip the meat in the flour first.
So, as I said, dip the chicken breast into the flour, coating all sides. Next, dip the chicken into the egg and spices mixture and finally, coat it with the breadcrumbs.

Now, you can fry them if you want, but I chose to cook them in the oven without any oil.
However, if you want to fry them, all you need to do is to make sure the oil is hot enough (but not too hot). It should be around 170° Celsius / 330• Fahrenheit.

Fry them until golden brown and remove it on a plate lined with paper towels.

If you choose to cook them in the oven, just place them on a grill, preheat the oven to 180• Celsius/ 360• Fahrenheit and let them cook for 40-50 minutes or until they are crispy. I prefer to switch to the ventilation function in the last ten minutes.

Let them cool for 5-10 minutes and after that you can serve them with some baked potatoes, mashed potatoes or on the top of a salad or just simple as they are.
